  • OTHER SHELLFISH

Our oysters are sourced from the Channel Islands and consist of two types:

    “Le Catillon” Native Oysters

Native oysters are a rare and special product which are so hard to find now that they have largely been replaced in the market by their Pacific cousins. The few that do make it onto the market are sometimes dredged from endangered wild stocks. However, the ‘Le Catillon’ Native Oysters are one of the first examples of Native oysters which have been sustainably farmed in the pristine waters around Jersey’s coast. The benefits associated with this premium product include:

    Picture of Native Oysters

All farmed oysters are subjected to rigorous health control checks as part of the regulations applicable to the aquaculture industry and thus have a higher level of food safety than wild sourced shellfish

    · They come from a single year class which means they are a more uniform size
    · They are farmed in intertidal waters and as such spend considerable periods of time exposed to the elements and as a result of that have a stronger abductor muscle so they are less prone to post harvest gaping which can lead to a longer shelf life
    · They are a fully sustainable and traceable product

In addition to all of the above the producer behind ‘Le Catillon’ Native Oysters is also part of a wider aquaculture restoration initiative to replenish over-fished native oyster beds in the Solent (with Blue Marine Foundation), Scotland (in Loch Crenan) and Ireland (in Galway Bay and Clew Bay).

Available in two sizes; medium (60 to 80 grams) and large (81-150 grams), supplies are currently limited to a few tonnes but larger quantities will be ready for sale later in 2019.

    “La Crete” Pacific Oysters

These too are farmed in the pristine coastal waters of Jersey. They also have all the same benefits as mentioned for the Le Catillon Native Oysters. In addition, they were the first farmed oysters in the world to achieve the prestigious Aquaculture Stewardship Council (ASC) certification.

Available in a range of sizes (normally 1, 2 or 3 – see table below) this product is available all year round and packed in boxes containing 25 or 50 oysters.

Product Size Average weight range Approx number per kilo
    1 121-150g 8
    2 86-120g 10
    3 65-85g 13
